Pancakes

Well, it's afternoons again for me so I thought it would be a good time to make pancakes. I'm aware pancakes wouldn't be new for most people, but I've never made them myself before, so I thought I'd give it a shot. The recipe is from Better Homes and Gardens New Cookbook, and it is for Buttermilk Pancakes, but they give the instructions for making regular pancakes (which are the ones I made).


Buttermilk Pancakes
Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 beaten egg
1 cup buttermilk or sour milk
2 tablespoons cooking oil

Plain pancakes changes:
Prepare as above, except substitute milk for buttermilk, increase baking powder to 2 teaspoons, and omit baking soda.

Instructions
1. Combine the flour, sugar, baking powder, baking soda, and salt. Make a well in center of flour mixture; set aside. Combine the egg, buttermilk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Add additional buttermilk to thin batter, if necessary.
2. For standard-size pancakes, pour or spread about 1/4 cup batter into a 3-inch circle onto a hot, lightly greased griddle or heavy skillet. For dollar-size pancakes, pour or spread about 1 tablespoon batter into a 1-inch circle onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat abour 2 minutes on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm.


Thoughts and Variations
They were pretty good. I used sunflower oil for the cooking oil and they turned out well. Just generic pancakes but for my first time making them, I'm pleased. I would maybe at a little more milk next time because they were rather thick, but they're pancakes so thick is normal. Mine ended up somewhere between the two sizes I think, since I was just using a spoon to plop batter into a pan. I had two and the rest are in the fridge for eating later this week. I will probably cook the breakfast sausage I bought tomorrow so I have more to eat than just pancakes. I could see making this my go-to recipe for when I have a pancake craving; quick and easy and yummy.

Funny enough, I was literally *just* watching the Binging with Babish episode on Twin Peaks Pancakes...

He makes his with buttermilk. :) The other secret is baking powder.... because the soda will make bubbles immediately but the double-acting baking *powder* doesn't come on line until the batter gets hot in the griddle... *poof* fluffy pancakes.

Oh! You can add 15ml (1tbsp) of white vinegar or lemon juice to enough milk to make 1c (240ml) total volume (i.e. add the spoonful first and then fill to the line)... do the math if you need less or more; that'll mean you won't waste any. (Please to note that bottled lemon juice often contains preservatives that give sensitive people issue; vinegar is its own preservative...

Flip side of this, cheap buttermilk *also* uses this method, so don't use it to try to make gravy as well as biscuits with store-bought buttermilk; the result has rather a lot of pucker factor... found that out the hard way MANY years ago.

Breakfast for dinner in general is good. Fine Southron tradition.

(My da used to have the local-where-we-grew-up Avis franchise... and people would rent cars to go to the Big Airport, but wouldn't necessarily rent them to come back... So we'd have to go fetch them.

Any airport of much of any size also near an interstate in the South has a Waffle House near it. So that's where we'd go for dinner on these pickup runs. Pecan waffles, bacon, eggs, etc.

These days most of the time if I'm in a Waffle House it's oh-goddess-ugly and it's steak or pork chops and eggs... but I'll take a pecan waffle if I've got time. :)

Waffle House is near most midwestern airports, too. Makes sense - people flying in and out at all hours need to eat. Most of the Waffle Houses I've seen recently have looked pretty run-down. I don't know if the food reflects that. But going Out For Breakfast is still one of my favorite things.

I've not had issues with them being run down, though the most recent ones I've eaten at are in Ohio and thus fairly new (they didn't use to run north of the Mason Dixon; when I realised there was a WH in the Columbus area that was NORTH of the Tim Horton's, I about laughed my arse off... ) The food is pretty much same as it ever was. Greasy, but not *too* greasy. The lingo hasn't changed, either... Just the number and variety of hash brown toppings. Which has a handy explanation chart.

You weren't looking in the right places. Indianapolis at least has had Waffle House since I was little - it was my grandfather's favorite place. The first time I remember eating there I was about 8, so it would have been 1966 or so.

Never thought to put pecans (or nuts of any kind) into pancakes. Must give that a try.

Also, I’ve been on many-a-trip south and have seen a great many Waffle Houses. I’ve heard lots of good things - one of these days I’ll make a point to try it out (assuming I can ever get across the border again).

Huddle House is better, but harder to find.

Don't forget your passport if you go down there, especially Texas. Like they say, it's a whole 'nother country.
