This might be a little disjointed and short because I'm tired but I did want to put up a post today. First, I want to encourage everyone to go nominate their favourite crowdfunding projects for the Rose & Bay Awrds. Relevant posts can be found in the [community profile] crowdfunding community. (Sorry for the lack of proper links, I'm out of spoons today.) The nomination deadline is January 31, and voting will be February 1-28.

Second, I missed some daily things again this week, although I did make up some too. Dinner this week was Pecan Crusted Chicken, and it turned out alright but I definitely needed to either butterfly or pound down the chicken breasts. They were pan cooked and the recipe called for 4oz breasts, but mine were probably 7 or so and therefore had a hard time cooking all the way. On the plus side, I learned something useful and I got to use the meat thermometer my mom bought me for Christmas for the first time, so it ended up ok. I didn't do the dishes Monday and jury's out about tonight, but I really should do them. My mom invited me to do a 21 day Pilates, yoga, barre challenge, and while I haven't done it every day I have done all the videos up to this point. It's been interesting although I'm not such a fan of the style of yoga in the challenge (I like my usual stuff better) and I'm not sure how I feel about pilates. I do like the barre workouts though, so that's another thing I can look for when I need healthy things to do.

Third, I'm going to a park with my sister this weekend that has winter trails available. It sounds like it will be fun but it's quite a drive so it's gonna be a long day. Getting out to be active will be good though, so I'm looking forward to that.

Fourth, I have a bunch of snowflake posts to catch up on, Rose & Bay nominations to make, entries to write and mittens to knit. I'm hoping to get a lot of that done in the next few days, but we'll have to see how it goes. I'm also planning on making a review post about my goals at month's end, if I remember and manage to squeak out the spoons. I'm going to try to do one each month, but I'm not sure yet how well that will work.

I hope everyone has been having a good January, and that the weekend to come is a great one. Stay warm and have fun!

The size of chicken breasts we get these days are MUTANT. You may wanna butterfly *and then pound down*... or there's a way you can double-butterfly (cut once from each side) so it opens like a map... Splurge on a really good sharp knife if you can. (I dunno if Babish ships north of the border for anything resembling cheap - maybe he's on Amazon.ca? but if you search for "babish clef" on there and you find a .... probably $30 CAD? knife that's a cross between a cleaver and a chef's knife? get it if you can, or cajole somebody into gifting you... I *love it*. High quality and WAY cheaper than anything else like it.)

And good meat thermometers FTW!

May your spoons self-replicate, and may your days be warm and cozy, your dreams (the good ones) come true, and your nightmares go to the politician of your choice.

Thank you! I borrowed that blessing from Mama Colleen, and since I can't give it back, I kinda have to pay it forward...

Another option for overly-thick chicken is to cut the pan cooking just short of what the recipe says, and then transfer to the oven. Most things that you would use as a crust (nuts, breading, etc) run the risk of burning the longer you cook them with direct heat (stovetop) - finishing in the oven will cook the meat through without that risk. Plus it gives you some free time to make a side dish or tidy up the kitchen, without feeling like you’re doing to many things at one time.

Enjoy your winter adventure this weekend. Sounds like a fun day. =]
